For the 2015 vintage, grapes were de-stemmed and left on skins in open-top fermenters for eight to ten days, with cap management handled through a combination of open pump-overs and hand plunging. The wine was then basket pressed into a combination of new (60%) and second-use French oak barrels, where it underwent natural malolactic fermentation and matured for a total of 22 months before bottling.
