About Pisco

Pisco is an unaged grape brandy from Peru and Chile, distilled from fresh fermented grape juice. It is clear, aromatic and the base of the Pisco Sour.

Peruvian vs Chilean pisco

Peruvian pisco is distilled once to bottling strength with no water added and is not aged in wood. It is labeled by style: Puro is a single grape such as Quebranta or Torontel, Acholado is a blend of grapes, and Mosto Verde is distilled from partially fermented must for a rounder, richer spirit. Chilean pisco can be distilled more than once and may be rested in wood, and it often uses Muscat grapes for a lighter, floral style.

What to look for in pisco

  • Country: Peruvian bottles like Caravedo and Barsol taste more of the grape. Chilean bottles like Alto del Carmen and Capel are often lighter and more floral.
  • Grape: Quebranta is non-aromatic, earthy and the classic Pisco Sour grape. Torontel, Italia and Muscat are aromatic and floral.
  • Style: Puro for one grape, Acholado for a balanced blend, Mosto Verde for a smooth sipper.
  • Use: a Quebranta or Acholado is the safe pick for a Pisco Sour or Chilcano. Save Mosto Verde and Torontel for sipping.

Pisco FAQ

What is pisco?

Pisco is a grape brandy made in Peru and Chile, distilled from fermented grape juice and usually bottled unaged.

What is the difference between Peruvian and Chilean pisco?

Peruvian pisco is distilled once to proof with no added water and never aged in wood. Chilean pisco can be distilled more than once, diluted to strength and rested in wood.

What is the best pisco for a Pisco Sour?

A Peruvian Quebranta or Acholado, such as Barsol Quebranta, Macchu Pisco or Caravedo Acholado. Shake 2 oz pisco with 1 oz lime juice, 3/4 oz simple syrup and an egg white, then top with a few drops of bitters.

What is Mosto Verde pisco?

Mosto Verde is distilled before the grape must finishes fermenting, so it takes more grapes per bottle and tastes rounder and smoother. Try Caravedo Mosto Verde.

What does Acholado mean?

Acholado is a Peruvian pisco blended from more than one grape variety, such as Quebranta and Torontel.
