Chattanooga Whiskey Co. developed what it calls its Tennessee High Malt recipe — a bourbon mashbill of yellow corn, malted rye, caramel malted barley, and honey malted barley, with at least 25% specialty malted grains. The original "Barrel 91" recipe was selected from among the first 100 barrels produced at their Experimental Distillery in Chattanooga, Tennessee, though distillation also occurs in Lawrenceburg, Indiana. Fermentation runs a full seven days using an attemperated process. After aging more than two years, the bourbon undergoes the distillery's signature Solera finishing — nearly 100 individual barrels are married inside a single 4,000-gallon charred white oak finishing barrel that, in the Solera tradition, is never fully emptied before being replenished with new stock.
