Cabo Wabo was originally founded in 1996 by rock musician Sammy Hagar and is now produced at Destiladora San Nicolas S.A. de C.V. (NOM 1440) in Jalisco, Mexico. The blue Weber agave used is harvested at a minimum of eight years of maturity from the mineral-rich volcanic soil of the Jalisco highlands, then cooked in traditional brick ovens before juice extraction via metal shredder and roller mill. After fermentation and double distillation in copper pot stills, the liquid rests in oak barrels for a minimum of 14 months — though some batches reportedly age up to 18 months — giving the añejo its amber color and layered complexity.
