About Cognac

Cognac is a protected style of brandy produced exclusively in the Cognac region of southwestern France, distilled twice in copper pot stills and aged in French oak barrels. This meticulous production process yields a spirit celebrated for its depth, elegance, and complexity. Governed by strict appellation rules, Cognac must meet rigorous standards for grape variety, distillation method, and minimum aging — requirements that distinguish it from all other brandies worldwide.

When selecting a Cognac, age designation serves as the most important guide. VS (Very Special) expressions carry a minimum of two years in oak and deliver bright, fruit-forward character ideal for cocktails. VSOP (Very Superior Old Pale) bottlings, aged at least four years, offer a richer balance of dried fruit, vanilla, and warm spice. XO (Extra Old) and beyond — including Hors d'Âge and vintage expressions — represent the pinnacle of the category, with deep layers of leather, tobacco, dark chocolate, and candied citrus developed over decades of barrel maturation.

What to look for in Cognac:

• Age Classification: VS, VSOP, and XO designations indicate minimum aging and directly correlate with flavor complexity and price point.
• Cru of Origin: The six designated growing regions — Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires — each contribute distinct terroir characteristics to the final spirit.
• House Style: Major producers like Hennessy, Rémy Martin, Courvoisier, and Martell each maintain signature blending philosophies, while smaller artisan houses often showcase single-estate character.
• Intended Use: Younger Cognacs shine in classic cocktails like the Sidecar and Cognac Old Fashioned, while aged expressions are best savored neat or with a single ice cube to unlock their aromatic depth.

Cognac remains one of the most revered spirits categories, offering remarkable range from accessible everyday pours to rare, collectible vintages. Sub-categories such as Fine Champagne blends, single-cru bottlings, and limited-edition releases each provide a unique lens into the art of French distillation.
