Quick Facts: ABV: 46%  |  Origin: Jutland, Denmark  |  NAS (No Age Statement)  |  Distillery: Stauning Danish Whisky

Production & Heritage

Stauning was founded in 2005 by a group of friends in western Jutland, Denmark, and has since grown into the country's most prominent whisky distillery. Kaos is double distilled in 24 small, direct-fired copper pot stills and blends three house expressions: the No-Smoke Single Malt (barley), Malted Rye, and Smoked Single Malt (barley). All grain is 100% locally sourced Danish barley and rye, floor-malted on site and smoked using traditional Nordic methods. The liquid matures in first-fill ex-Maker's Mark bourbon casks — wheated bourbon barrels that contribute a distinctive sweetness and soft vanilla backbone not typically found in Scotch-oriented blended malts.

Tasting Notes

Aroma: Cereals and dark chocolate greet the nose first, layered over toasted oak and warm caramel. Given time in the glass, cinnamon bark and bonfire smoke develop, hinting at the Nordic peat influence beneath.

Taste: The entry delivers rich smoked chocolate and soft nougat, transitioning into caramel and black liquorice at the mid-palate. Sweet apple and oak emerge toward the peak, underscored by an effervescent smokiness that recalls salted pretzel crusts — a signature texture that sets Kaos apart from more one-dimensional smoky whiskies.

Finish: Long and decidedly smoky, trailing vanilla, orange peel, tobacco leaf, and dried red fruit. Oak reasserts itself at the close, lending structure and a dry, lingering warmth.

How to Drink Stauning Kaos

Neat or with a few drops of water is the ideal starting point; water opens the dialogue between the smoke, rye spice, and caramel sweetness. In a Penicillin, the Nordic smoke and honey-like sweetness substitute compellingly for a traditional Islay component while the rye grain adds an unexpected spice layer. A Rob Roy benefits from the malt's caramel depth and rye backbone playing against sweet vermouth. For a Whisky Sour, the apple and smoked chocolate notes create an unusually rich counterpoint to fresh citrus and egg white.

Best For

  • Gifting a whisky enthusiast ready to explore beyond Scotland and Japan
  • Introducing friends to Nordic-style craft whisky at a serious quality level
  • After-dinner sipping alongside dark chocolate, smoked almonds, or dried fruit
  • Adding a distinctive conversation piece to an established home whisky collection

Frequently Asked Questions

What does Stauning Kaos taste like? It leads with smoked dark chocolate and nougat, shifts into caramel, liquorice, and sweet apple, then finishes long with vanilla, tobacco, and dried red fruit. The overall character balances assertive Nordic peat smoke against rich, wheated-bourbon-cask sweetness.

How does Stauning Kaos compare to Islay peated single malts? The smoke can be reminiscent of Islay-style peat at times, but Stauning's use of traditional Nordic smoking methods and locally sourced Danish grain produces a distinctly different smoke character — less maritime and more campfire-forward. The inclusion of malted rye in the blend also introduces a spicy, bread-like dimension absent from single-grain Islay whiskies.

Is Stauning Kaos good for sipping neat? At 46% ABV and non-chill filtered, it is well-suited for neat sipping, delivering full texture and layered flavor without excessive heat. A few drops of water can further reveal the interplay between smoke and sweetness.

Where is Stauning Kaos made? Stauning Kaos is produced at Stauning Danish Whisky in the Jutland region of western Denmark. All grain is floor-malted on site, and distillation takes place in 24 small, direct-fired copper pot stills at the distillery.

What foods pair well with Stauning Kaos? Dark chocolate (70% cacao or higher) mirrors the smoked chocolate palate notes. Smoked salmon or gravlax echoes the Nordic smoke character. Aged Gouda or Comté provides a nutty, caramel counterpoint. Salted caramel desserts amplify the bourbon-cask sweetness. Dried figs or dates complement the dried red fruit on the finish.

What sizes does Stauning Kaos come in? Stauning Kaos is widely available in the standard 750ml bottle size.

Is Stauning Kaos worth the price? It positions as a premium craft whisky, reflecting the labor-intensive floor-malting process, small-batch distillation across 24 pot stills, and first-fill bourbon cask maturation. Its Double Gold medal and 91-point Whisky Advocate score support strong value within the premium blended malt tier.

Why Stauning Kaos?

No other blended malt on the market merges floor-malted Danish barley, malted rye, and Nordic-smoked barley into a single expression — Kaos occupies a category of one. The combination of 24 direct-fired copper pot stills and first-fill ex-Maker's Mark bourbon casks yields a whisky that is simultaneously smoky, sweet, and spice-driven without any single element dominating. A Double Gold at the 2021 New York Wine & Spirits Competition and 91 points from Whisky Advocate confirm it performs at a level that earns comparison to established Scotch and Japanese producers. For drinkers looking to expand their whisky horizons with something genuinely different yet immediately rewarding, Kaos makes a compelling case.
