Description

M&H Terroir Sea of Galilee 700ML is a cask-strength Israeli single malt whisky bottled at approximately 56.2% ABV in a 700ml format. Named a Category Winner at the World Whiskies Awards 2026, this expression stands as one of the most distinctive entries in the growing hot-climate whisky movement, matured 154 metres below sea level where the Sea of Galilee meets the Jordan River.

Quick Facts: ABV: ~56.2% (varies by batch)  |  Origin: Sea of Galilee, Israel  |  Cask Strength, NAS  |  Distillery: Milk & Honey (M&H), Tel Aviv

Production & Heritage

Milk & Honey Distillery was founded in 2014 in Tel Aviv as Israel's first whisky distillery. The spirit is double-distilled in copper pot stills from 100% malted barley, with a deliberately narrow heart cut — starting at 80% and ending at 70% — that produces a sweet, grassy new make at around 75% ABV. For this Terroir series release, the new-make spirit is filled into grape-based marc casks and transported to a maturation site at an altitude of −154 metres, where extreme conditions — temperatures ranging from 11°C to 38°C and humidity between 40% and 75% — drive an extraordinary 16% annual angel's share. The high humidity draws alcohol from the casks while scorching heat evaporates water, creating a push-pull effect that concentrates flavor in ways impossible in conventional warehouse climates.

Tasting Notes

Aroma: Sweet exotic banana and dates rise first, followed by faint roasted nuts, fresh ginger, and warm market spice. The marc cask influence emerges gradually, lending a subtle grapey undertone beneath the fruit.

Taste: The entry is rich and coating, with marmalade and date syrup spreading across the tongue. A wave of warm baking spice marches through at mid-palate, joined by concentrated dark caramel and dried fig. At cask strength, every element feels amplified without becoming harsh.

Finish: Long and layered, the rush of complex spice and honey slowly gives way to tannic black tea and freshly stripped tree bark. A peppery warmth lingers well after each sip, with toasted oak providing the final anchor.

How to Drink Sea of Galilee

At cask strength, this whisky rewards a slow, neat pour — start undiluted to appreciate the full intensity, then add a few drops of water to open the fruit and soften the spice. An Old Fashioned benefits from the concentrated dark caramel and date notes, which stand up to bitters and sugar without losing identity. A Whisky Sour plays the marmalade sweetness against citrus for a balanced, fruit-forward cocktail. A Rob Roy pairs the marc-cask character with sweet vermouth, amplifying the dried-fruit and spice complexity.

Frequently Asked Questions

What does Sea of Galilee taste like? Rich marmalade and date syrup lead into concentrated baking spice, dark caramel, and dried fig, finishing with tannic black tea and a long peppery warmth. The marc cask maturation adds a subtle grape-derived depth beneath the fruit.

How does Sea of Galilee compare to M&H Classic Single Malt? The M&H Classic is bottled at a lower ABV and aged at the Tel Aviv distillery, producing a lighter, more approachable dram. The Sea of Galilee expression is cask strength and matured in hotter, more humid conditions 154 metres below sea level, yielding deeper wood extraction, greater intensity, and more concentrated fruit.

Is Sea of Galilee good for sipping neat? Yes — its cask-strength bottling delivers maximum flavor complexity when sipped neat, though a few drops of water help open the banana and date aromatics and temper the spice for those who prefer a gentler experience.

Where is Sea of Galilee made? The spirit is distilled at the Milk & Honey Distillery in Tel Aviv, Israel's first whisky distillery, founded in 2014. The filled casks are then transported to a maturation site 154 metres below sea level where the Sea of Galilee meets the Jordan River.

What foods pair well with Sea of Galilee? Dried fruit and nut platters mirror the whisky's date and roasted-nut character. Dark chocolate with high cacao content complements the tannic finish. Aged hard cheeses such as Gruyère echo the caramel depth. Lamb tagine with apricots harmonizes with the warm spice and dried-fig notes. Baklava reinforces the honey and nut sweetness found on the palate.

What sizes does Sea of Galilee come in? The standard release is a 700ml bottle, which is the primary format available for this expression.

Is Sea of Galilee worth the price? This expression positions as a premium, limited-production cask-strength single malt from a young but acclaimed distillery. Its World Whiskies Awards 2026 Category Winner recognition, unique sub-sea-level maturation, and marc-cask finishing place it firmly in specialty-bottle territory for collectors and adventurous drinkers.

Why Sea of Galilee?

What separates this whisky from the broader cask-strength field is the verifiable science behind its maturation: a 16% annual angel's share driven by the opposing forces of extreme heat and humidity at −154 metres altitude. That accelerated interaction between spirit and marc cask produces a concentration and depth of flavor that cannot be replicated in a temperature-controlled Scottish or American warehouse. The World Whiskies Awards 2026 Category Winner recognition confirms that the international judging community sees this as more than a novelty — it is a legitimate expression of terroir in whisky. For drinkers seeking a single malt that tastes genuinely unlike anything else on the shelf, the Sea of Galilee delivers a persuasive argument rooted in geography, climate, and careful distillation.
