Description

Layer Cake Virgin Chardonnay is a 100% unoaked Chardonnay from California's Central Coast, bottled at 13.5% ABV in a standard 750ml format. The 2019 vintage earned 90 points from Wine Enthusiast, affirming this stainless-steel-fermented white as one of the more compelling value-driven expressions of pure, unmasked Chardonnay fruit from the region.

Quick Facts: ABV: 13.5%  |  Origin: Central Coast, California  |  Style: Unoaked (Stainless Steel)  |  Winemaker: Jayson Woodbridge

Production & Heritage

Layer Cake is the project of Jayson Woodbridge, also known for his work with One Hundred Acres, a Napa Valley luxury wine label. The Virgin Chardonnay sources fruit from Monterey County vineyards near the Santa Lucia Highlands and from a Santa Barbara County vineyard situated between the Santa Maria Valley and the Sta. Rita Hills — two of California's coolest-climate Chardonnay growing areas. True to its name, this wine never touches oak at any stage; fermentation and aging take place entirely in stainless steel tanks, preserving varietal purity and bright acidity without the buttery, vanilla-laden influence that defines most Central Coast Chardonnays.

Tasting Notes

Aroma: The nose opens with delicate Meyer lemon and nectarine, followed by orange blossom and gardenia. A subtle mineral quality — river rocks and a dusting of chalk — adds complexity beneath the fruit.

Taste: The entry is full-bodied and immediately juicy, with a blast of refreshing acidity that carries white peach, pineapple, and lemon curd across the mid-palate. Layers of guava, green apple, and pink grapefruit emerge, balanced by a faint pinch of sea salt that keeps the fruit from leaning too sweet.

Finish: The finish is dry and medium in length, landing with a flinty, mineral-driven edge. Lingering notes of citrus pith and a whisper of anise close things out cleanly.

How to Drink Virgin Chardonnay

Serve chilled to around 45–50°F to let the aromatics lift without muting the acidity. This wine thrives on its own but also performs well in wine-based cocktails. A White Wine Spritzer pairs the crisp citrus profile with soda water and a twist of lemon for warm-weather sipping. A French 75 variation using this Chardonnay in place of Champagne provides tropical depth to the gin-and-lemon framework. A Sangria Blanca built around sliced stone fruit and fresh herbs takes full advantage of the wine's nectarine and pineapple character.

Best For

  • Introducing friends who dislike heavily oaked Chardonnay to a California alternative
  • Summer patio dinners featuring grilled seafood or light salads
  • A weeknight wine that over-delivers for its price tier
  • Building a comparative tasting of oaked versus unoaked Chardonnays

Frequently Asked Questions

What does Virgin Chardonnay taste like? It delivers bright pineapple, lemon curd, and white peach flavors with lively acidity and a flinty, dry finish. The complete absence of oak allows pure fruit and mineral character to dominate from start to finish.

How does Virgin Chardonnay compare to oaked California Chardonnay? Traditional oaked California Chardonnays tend toward butterscotch, vanilla, and a rounder, creamier mouthfeel from barrel aging, while Virgin Chardonnay is leaner, crisper, and driven by citrus and tropical fruit. The stainless steel approach delivers a wine closer in spirit to Chablis or cool-climate French Chardonnay than to a typical Napa or Sonoma bottling.

Is Virgin Chardonnay good for sipping on its own? Absolutely — its full body and layered fruit make it satisfying as a standalone pour, while its bright acidity keeps it refreshing rather than heavy.

Where is Virgin Chardonnay made? It is produced from Central Coast California vineyards, specifically drawing fruit from Monterey County near the Santa Lucia Highlands and from Santa Barbara County between the Santa Maria Valley and the Sta. Rita Hills. Winemaker Jayson Woodbridge oversees production.

What foods pair well with Virgin Chardonnay? Grilled shrimp or lobster benefits from the wine's citrus acidity cutting through richness. Ceviche mirrors its bright tropical notes. Goat cheese salads echo the mineral, chalky undertones. Roasted chicken with herbs complements its full body. Sushi and sashimi work well alongside the clean, unoaked profile.

What sizes does Virgin Chardonnay come in? Layer Cake Virgin Chardonnay is widely available in the standard 750ml bottle.

Is Virgin Chardonnay worth the price? It positions as a value-tier California Chardonnay that punches above its weight — 90 points from Wine Enthusiast and a Silver medal at the San Francisco International Wine Competition suggest quality that rivals bottles at higher price points in the unoaked category.

Why Virgin Chardonnay?

The defining move here is what Woodbridge chose not to do: no oak, no barrel influence, no malolactic shortcuts to crowd-pleasing butteriness. That restraint, paired with high-quality Central Coast fruit from two of California's premier cool-climate appellations, results in a Chardonnay that actually tastes like Chardonnay. The 90-point Wine Enthusiast score on the 2019 vintage and a Silver medal from the San Francisco International Wine Competition confirm it is not simply a novelty but a serious expression of the grape. For drinkers who have written off California Chardonnay as uniformly heavy and oaky, this bottle is a direct and convincing counter-argument.
