Kingsbarns Distillery was converted from a historic farmstead in the East Neuk of Fife and operates under the Wemyss family's ownership. The whisky is made from locally farmed barley and fresh spring water drawn from the Cambo burn, fermented with a dual-yeast regime — one British strain and one French — in stainless steel washbacks designed to produce a clean, fruity spirit. Under the consultancy of the legendary Dr. Jim Swan, the liquid is matured in a combination of 90% Heaven Hill ex-bourbon casks and 10% STR (shaved, toasted, and recharred) red wine casks, a technique Swan pioneered to maximize fruit character and wood integration in young whisky.
