The recipe behind Averna dates to 1859, when Benedictine monk Frà Girolamo of the Abbey of the Holy Spirit in Caltanissetta entrusted it to local textile merchant Salvatore Averna. By 1868, Averna had begun commercial production, making it the first licensed spirit in Sicily. The amaro is produced through a prolonged infusion process: Mediterranean herbs, roots, and spices are first combined and macerated in a base spirit, after which pomegranates and essential oils of bitter orange and lemon are introduced. The resulting infusion is then blended with pure alcohol, water, and sugar, with caramel added for color, before being filtered and rested to allow the flavors to marry.
