Description

Wyoming Double Cask Bourbon Whiskey 750ML is a 100-proof (50% ABV) small-batch bourbon finished in Pedro Ximenez sherry casks, bottled in a 750ml format. Earning an A grade from Drinkhacker and Silver medals at both the L.A. Spirits Awards and SIP Awards, this expression layers deep dried-fruit richness over a classic wheat-forward bourbon backbone.

Quick Facts: ABV: 50% (100 Proof)  |  Origin: Wyoming, USA  |  5-Year Bourbon, PX Sherry Cask Finish  |  Distillery: Wyoming Whiskey

Production & Heritage

Wyoming Whiskey, established in 2009 as the first legal distillery in Wyoming history, distills its bourbon from a wheat-forward mashbill of 68% corn, 20% wheat, and 12% malted barley. The Double Cask expression begins with a full five years of maturation in new charred American oak barrels before being transferred into decades-old Pedro Ximenez sherry casks for secondary finishing. Each release draws from no more than five PX casks, keeping batch sizes extremely limited and giving each bottling a distinct personality shaped by the individual barrels selected.

Tasting Notes

Aroma: Dried apricot and mission fig lead immediately, followed by stewed prune and a wave of candied orange peel. Underneath that fruit-forward opening sits a foundation of vanilla buttercream and toffee from the bourbon's years in charred oak.

Taste: The entry is rich and unmistakably sweet — dark berries layered with buttery vanilla syrup that recalls a stack of pancakes drizzled in fruit compote. At mid-palate, black raisins and dried dates emerge alongside candied orange peel, adding complexity. The wheat-heavy grain bill keeps the texture soft and rounded, preventing the sweetness from becoming cloying at 100 proof.

Finish: Long and warming, with fresh-ground cinnamon gradually fading into residual toffee and dried stone fruit. The PX sherry influence lingers well after each sip, leaving a satisfying, slightly tannic close.

How to Drink Double Cask

Neat or with a few drops of water is the ideal serve, as water opens up the sherry-influenced dried fruit layers without diluting the 100-proof intensity. On the rocks works well in warmer months, where the melting ice slowly reveals the vanilla and toffee undertones.

  • Old Fashioned — The concentrated dried-fruit sweetness and cinnamon spice stand up to bitters and sugar without losing character.
  • Manhattan — PX sherry finishing already leans toward vermouth territory, making this bourbon a natural fit that adds fig and dark berry depth.
  • Boulevardier — The wheat-forward softness balances Campari's bitterness, while the sherry-cask notes complement sweet vermouth beautifully.

Best For

  • Gifting a bourbon enthusiast who values unique cask finishes over standard expressions
  • After-dinner sipping alongside dessert courses featuring chocolate or dried fruit
  • Building a home bar collection of American whiskeys with sherry-cask influence
  • Exploring craft distilling beyond Kentucky bourbon country

Frequently Asked Questions

What does Double Cask taste like? Wyoming Double Cask delivers rich dried fruit — fig, apricot, and black raisin — layered over a buttery vanilla and toffee bourbon base, with a long cinnamon-warmed finish. The Pedro Ximenez sherry finishing adds a distinctive sweetness that sets it apart from standard bourbons.

How does Double Cask compare to Woodford Reserve? Both share buttery undertones from wheat influence, but Wyoming Double Cask leans significantly heavier into dried fruit and dark berry territory thanks to its PX sherry cask finishing. Woodford Reserve is a more classically structured Kentucky bourbon with oak and baking spice at its core, while Double Cask trades that restraint for sherry-driven richness at a higher 100-proof bottling strength.

Is Double Cask good for sipping neat? Yes — its 50% ABV delivers intensity without harshness, and the wheat-forward mashbill creates a soft, rounded mouthfeel that rewards slow, undiluted sipping. A few drops of water can further unlock the dried fruit and toffee aromatics.

Where is Double Cask made? Wyoming Double Cask is distilled and aged at Wyoming Whiskey in Kirby, Wyoming, making it a product of the state's first legal distillery, founded in 2009. All production — from mashing through barrel aging — takes place in Wyoming.

What foods pair well with Double Cask? Dark chocolate truffles complement the fig and raisin notes; aged Manchego cheese echoes the Spanish sherry-cask influence; roasted duck with a cherry reduction mirrors the dried fruit sweetness; pecan pie aligns with the toffee and vanilla undertones; and dried fruit and nut boards create a natural bridge to the bourbon's PX-driven profile.

What sizes does Double Cask come in? Wyoming Double Cask Bourbon is available in the standard 750ml bottle format.

Is Double Cask worth the price? Positioned in the premium tier for American whiskey, Double Cask justifies its standing through genuine scarcity — each release limited to five PX casks — plus a five-year age statement, 100-proof bottling strength, and a finishing process using decades-old sherry casks. Drinkhacker's A grade and dual Silver medals from competitive spirits awards reinforce its credibility at this price point.

Why Double Cask?

What separates Wyoming Double Cask from the growing field of finished bourbons is the extreme selectivity of its secondary maturation: no more than five decades-old Pedro Ximenez sherry casks per release, each contributing a unique dried-fruit signature that cannot be replicated at scale. The wheat-heavy 68/20/12 mashbill provides an unusually soft canvas for that PX influence, resulting in a bourbon that drinks more like a rich dessert whiskey than a typical corn-forward spirit. Rated A by Drinkhacker and holding an 88/100 on Whiskybase, this is one of the few craft American whiskeys earning critical praise beyond its home region. For drinkers who want sherry-cask complexity without leaving the bourbon category, Double Cask occupies a niche that very few competitors have credibly filled.
