Description
Cihuatan Xaman XO 16 Year Rum 700ML is a 40% ABV aged rum from El Salvador, matured 16 years across American oak bourbon and rare Mayan Ceiba barrels. Recognized with a Gold Medal at the International Spirits Challenge, this expression holds the distinction of being the first XO rum ever exported from El Salvador — and the only rum in the world finished in Ceiba wood.
Quick Facts: ABV: 40% | Origin: El Salvador | 16 Year Age Statement | Distillery: Licorera Cihuatán
Production & Heritage
Licorera Cihuatán, established in 2004 as a subsidiary of the Ingenio La Cabaña sugar group, is El Salvador's only rum distillery. Freshly harvested local sugarcane is milled using a century-old mill, converted into molasses, fermented, and distilled in column stills. The resulting spirit spends 15 years maturing in American oak ex-bourbon barrels before a final year in barrels made from Ceiba wood — a tree native to tropical Central America and considered a sacred symbol of the universe by the ancient Maya. No other distillery in the world uses Ceiba barrels, making this finishing step entirely unique to Cihuatán.
Tasting Notes
Aroma: The nose opens with grilled pineapple and ripe banana before settling into vanilla, raisins, and cocoa. Deeper inhalation reveals clove, nutmeg, leather, and a subtle balsamic quality layered beneath the distinctive earthy sweetness of Ceiba wood.
Taste: The entry is warm and fruit-forward — baked apples and pears mingling with panela-like brown sugar and meaty molasses. At mid-palate, dark chocolate and tobacco take hold alongside cinnamon and fresh grass, building toward a rich, spice-driven peak. The Ceiba barrel influence is evident in a woody, resinous undertone that distinguishes Xamán from conventional aged rums.
Finish: Medium-long, with lingering wood smoke, old oak tannins, and a trailing sweetness of dried plum. The final impression is dry yet balanced, with clove and dark chocolate echoing softly.
How to Drink Xamán XO
This rum is built for sipping neat or with a single ice cube, which opens the tropical fruit aromatics without diluting the Ceiba wood character. For cocktails, it brings depth and complexity to an Old Fashioned, where the dark chocolate and tobacco notes anchor well against bitters. It also elevates a Jungle Bird — its baked fruit and smoky backbone stand up to Campari's bitterness. In a Mai Tai, Xamán's layered oak and tropical profile adds a more contemplative dimension to the classic tiki template.
Best For

Frequently Asked Questions
What does Xamán XO taste like? Xamán XO delivers baked tropical fruit, dark chocolate, tobacco, and old oak, all underscored by a distinctive resinous sweetness from its Ceiba wood finish. Clove, cinnamon, and wood smoke add further complexity on a medium-long finish.
How does Xamán XO compare to Diplomático Reserva Exclusiva? Both rums occupy a similar soft, sweet Latin rum profile, but Xamán XO is noticeably drier and more wood-driven thanks to its 16-year aging and unique Ceiba barrel finish. Diplomático Reserva Exclusiva leans heavier into caramel and brown sugar sweetness at a shorter overall maturation.
Is Xamán XO good for sipping neat? At 40% ABV with 16 years of barrel aging, Xamán XO is approachable and smooth enough to drink neat, where its layered oak, fruit, and spice complexity are best appreciated.
Where is Xamán XO made? Xamán XO is produced at Licorera Cihuatán, El Salvador's sole rum distillery, which operates alongside the Ingenio La Cabaña sugarcane estate. The sugarcane is grown and milled locally in El Salvador.
What foods pair well with Xamán XO? Dark chocolate truffles complement its cocoa and tobacco notes. Grilled pineapple echoes the rum's tropical fruit character. Smoked pork or barbecue ribs work well against its wood smoke and molasses backbone. A sharp aged cheese like Manchego contrasts its sweetness, and cinnamon-spiced flan mirrors its warm baking-spice finish.
What sizes does Xamán XO come in? Cihuatán Xamán XO is available in a standard 700ml bottle.
Is Xamán XO worth the price? Xamán XO positions as a premium aged rum within the broader category, and its 16-year age statement, unique Ceiba barrel finish, and limited production from El Salvador's only distillery provide genuine rarity that justifies its tier above entry-level and mid-range expressions.
Why Xamán XO?
The single most compelling reason to seek out this rum is the Ceiba barrel finish — a production step no other distillery in the world replicates. That one-year rest in sacred Mayan wood imparts an earthy, resinous quality that separates Xamán from the crowded field of bourbon-barrel-aged rums. As the first XO rum ever exported from El Salvador, backed by a Gold Medal at the International Spirits Challenge, it represents a genuinely distinct point of origin in a category often dominated by Caribbean and Guyanese producers. For drinkers looking to expand beyond familiar labels, Xamán XO delivers both story and substance in equal measure.
