Description

Kilchoman Machir Bay 750ML is a peated Islay single malt Scotch whisky bottled at 46% ABV from Scotland's most westerly distillery. Quick Facts: ABV: 46%  |  Origin: Islay, Scotland  |  NAS (No Age Statement)  |  Distillery: Kilchoman (est. 2005)

Production & Heritage

Founded in 2005, Kilchoman is the first new distillery built on Islay in over 124 years and remains the only distillery on the island that completes the entire whisky-making process on-site — from growing barley to malting, distilling, maturing, and bottling. Machir Bay is vatted from 90% ex-bourbon barrels and 10% Oloroso sherry casks, creating a layered interplay between sweet vanilla and dried-fruit richness beneath the peat. The distillery takes notably smaller heart cuts during distillation, concentrating only the purest portion of spirit for maturation, which contributes to a clean, fruit-forward character uncommon in young Islay malts. Machir Bay is non-chill filtered and bottled without added color at a robust 46% ABV.

Tasting Notes

Aroma: Elegant peat smoke rolls in first, followed by bright citrus zest — lemon and grapefruit — and a biscuity sweetness reminiscent of crumbled shortbread. Underneath, a gentle salinity and honeyed floral quality emerge with time in the glass.

Taste: The entry is surprisingly sweet, with tropical fruit — papaya and ripe mango — meeting caramel and vanilla on the mid-palate. Layers of cinnamon, baking spice, and coconut develop as the bourbon cask influence asserts itself. The Oloroso sherry component adds dried raisin and a subtle nuttiness that grounds the brighter fruit notes.

Finish: Medium-long and fresh, with peat smoke returning alongside lingering vanilla and salted caramel. A lightly ashy quality fades gradually, leaving clean citrus and malt on the close.

How to Drink Machir Bay

Neat with a few drops of water is the most rewarding approach — the 46% ABV opens up generously without losing structure. The tropical and citrus fruit notes also make Machir Bay surprisingly versatile in cocktails. A Penicillin gains depth from the fruit-forward peat, working beautifully with honey-ginger syrup. A Smoky Highball with quality soda water and a lemon twist plays to the whisky's bright citrus character. For a bolder option, substitute Machir Bay in a Blood and Sand, where the sherry cask sweetness complements the cherry and orange components.

Frequently Asked Questions

What does Machir Bay taste like? Machir Bay leads with tropical fruit, citrus, and vanilla sweetness, balanced by elegant peat smoke and baking spices. The sherry cask influence adds dried raisin and caramel depth without overpowering the bright fruit character.

How does Machir Bay compare to Ardbeg 10? Both are non-chill filtered Islay single malts at 46% ABV, but Ardbeg 10 leans toward more intense, maritime peat with a 10-year age statement and exclusively bourbon cask maturation. Machir Bay is generally softer and fruitier, with its 10% Oloroso sherry cask component adding dried-fruit sweetness and a rounder body that Ardbeg 10 does not share.

Is Machir Bay good for beginners exploring peated whisky? Yes — the fruit-forward sweetness and moderate peat level make it one of the most approachable Islay malts, serving as an excellent gateway before moving to heavier-peated expressions.

Where is Machir Bay made? Machir Bay is produced at Kilchoman Distillery on the western coast of Islay, Scotland's most famous whisky-producing island. Kilchoman is the only Islay distillery that grows its own barley, malts, distills, matures, and bottles entirely on-site.

What foods pair well with Machir Bay? Smoked salmon or gravlax echoes the whisky's maritime salinity. Dark chocolate (70%+) draws out the caramel and vanilla. Aged Comté or Gruyère complements the nutty sherry cask notes. Grilled stone fruit like peaches bridges the tropical flavors. Lightly spiced charcuterie matches the cinnamon and baking-spice undertones.

What sizes does Machir Bay come in? Machir Bay is widely available in the standard 750ml bottle, and Kilchoman also releases it in 50ml miniature formats for sampling.

Is Machir Bay worth the price? Machir Bay positions as a mid-range Islay single malt, sitting between entry-level blended malts and premium age-stated expressions. Its multiple gold medals, 46% non-chill-filtered bottling strength, and unique farm-distillery provenance represent strong value in its price tier.

Why Machir Bay?

Kilchoman's status as Islay's only true farm distillery — controlling every step from barley field to bottle — is not marketing shorthand; it is a genuine rarity in Scotch whisky. The decision to take smaller heart cuts during distillation yields a concentrated, fruit-rich spirit that punches well above what its age might suggest, a quality recognized by judges who awarded it IWSC Gold and International Spirits Challenge Gold in 2022 alone. The 90/10 bourbon-to-sherry cask ratio strikes a careful balance that many distilleries twice Kilchoman's age still struggle to achieve. For drinkers seeking Islay character with finesse rather than brute force, Machir Bay stands as one of the most compelling expressions on the island.
