Lucano 1894 S.r.l. has been producing amaro in Pisticci, a small town in the Basilicata region, since the late 19th century. The recipe calls for more than 30 botanicals—among them bitter and sweet oranges, angelica, wormwood, gentian, clary sage, achillea moscata, cardo santo, elder, rue, and aloe. What distinguishes the production is a hot infusion process conducted in thermo-controlled baths at 55°–60°C overnight, a step the distillery calls "ripening," which draws out the citrus and floral character of the botanical blend. The resulting extract then undergoes a five-month aging period with natural stratification: heavier components settle to the bottom, lighter ones rise, and only the middle "heart" of the liquid is retained for bottling.
